Either I'm getting better at making cupcakes or these red velvet cupcakes are just easy to make. I'm not a big chocolate fan. In fact, if it's not my time of the month I stay away from chocolate, because it just doesn't taste great to me. I would much rather have some kind of vanilla or coconut dessert. These cupcakes have a few tablespoons of cocoa added to them, and that ruined them for me. I took two bites and threw my cupcake away...BUT....my family loved them. If you like red velvet and enjoy the taste of chocolate, then you'll probably like these cupcakes. These cupcakes are not light and fluffy - they're rich and moist. Almost velvety in your mouth. Not the best cupcake in the summer but probably a great fall or winter cupcake.
I was upset that they weren't the deep red color that I was expecting. I guess I'll have to try different coloring next time. Want to try them out? Follow this recipe at the Martha Stewart website.
