Okay....YUM! These cupcakes are easy to make - the hardest part is zesting the 3 limes, 3 lemons, and 2 oranges for the batter. They are delicious and everyone who has tried them absolutely loves them (including me, and I'm hard to please). You're going to want to make these cupcakes in the Spring or Summer, because of the satisfying citrus flavor. The consistency of the cupcake is a little lighter than pound cake, so if you like your cupcakes really light and fluffy - these will not be your favorite. You have to add 9 eggs to the batter - but they make 36 cupcakes (instead of the usual 24). If you're a baker, you know that this many eggs equals thicker batter and denser cupcakes.
I would have to say that these are my FAVORITE so far in the cupcake challenge. I couldn't get a good picture for some reason, so don't judge this cupcake by it's above picture. If you want to make them, here's the recipe on the Martha Stewart website.
