I Looooooove sweet potato cupcakes. I usually eat 1 to 2 cupcakes from each batch that I make. I really try to eat them in moderation, so I don't gain the Martha 15* and there haven't been too many batches where I've had more. I send them with my husband to work, give some to my mother-in-law and anybody else who wants a sweet treat. This time I ate 1 to 2 cupcakes per day for four days in a row. I want to make these again for Christmas but I don't want to eat that many cupcakes over the Christmas holiday.
And they weren't so simple to make. You have to cook the sweet potatos in the oven for an hour, let them cool and scrape out the insides before you can make the batter. The hardest part was trying to get the mound of mini marshmallows to stay together long enough to put them in the broiler to get them nice and toasted. If I didn't have the help of my husband on this one, I would have been frustrated to say the least.
