I found this Everyday Food recipe on the Martha Stewart website. It looked easy to make and delicious, so I decided we’d try it for dinner. There’s not much to it and it tasted alright; however, it’s nowhere close to my favorite pasta dishes. I probably wouldn’t make it again, because I have so many other pasta recipes that I love A LOT more than this dish, but I’d recommend trying it. The crunchy top of prosciutto and parmesan cheese was the best part.
Just a little side note: I’m no longer allowed to have Girl Scout cookies in my home. My husband was incredibly thoughtful and bought me three boxes of caramel delights for Valentine’s Day, and I’ve already gone through two boxes without much help. He has maybe had five caramel delights – I’ve eaten the rest. Yesterday I ate an entire box of them. I started snacking on them right after breakfast and finished them by the time my husband got home from work. After my Girl Scout cookie binge I made a concerted effort to work out this morning, but I definitely didn’t burn the amount of calories that I consumed.I’m usually pretty good about limiting my portion sizes and not going overboard when I indulge. I can have 24 cupcakes sitting in my house and only eat one or two out of the entire batch. I can usually do it with cookies as well, but not Girl Scout cookies. They’re like my form of crack. I have no self-control when it comes to these delicious, mouth-watering caramel delights. I can’t keep myself from eating them. I crave them even if I’m full – I know that they’re not good for me, but I keep shoveling them in. I’m a Girl Scout cookie addict. I think I might just go ahead and finish this last box. Get them out of the house, so I can stop obsessing about when I’m allowing myself to have another one.
