If you want an easy-to-make meal that doesn’t take a lot of preparation, you should try the one-pot chicken and brown rice recipe in the Everyday Food January/February 2010 edition. I made it for dinner on Monday and was able to bake a batch of cupcakes while it cooked. This recipe does take a little while to cook, so you need to start it a good hour and a half before you want to eat – but you don’t have to do much.It was pretty tasty. The chicken was tender and came right off the bone, and the rice was flavorful. Overall, it’s a pretty healthy dinner at 372 calories per serving and would be a great dinner for a busy mom to cook while she helps her kids with homework.
