If you're on a diet and looking an indulgent, healthy dessert, you should seriously try the mango parfait from the April 2010 edition of Everyday Food. You only need mangoes, water, greek yogurt, sugar, and toasted coconut. It takes about 10 minutes to make. My husband and I agreed that we'd make this more often while mangoes are in season. Refreshing and yummy.
