Mediterranean macaroni and cheese has become one of my favorite dishes. My mother-in-law came over the other night to work on balsa wood postcards for swag bags at a craft show in Richmond, Virginia. My lovely husband offered to make us dinner, and he fixed this meal why we crafted. I can’t take credit for it, since I didn’t even help. But I can say that it was super delicious. He said that it was simple to make.
