I don't usually come across recipes that are truly unique. Something I've never tasted or seen before. When I saw the recipe for raspberry-lemon whoopie pies in the April 2010 edition of Everyday Food what stood out right away was how unique they looked. I knew I had to try to make them. They turned out as beautiful as the picture in the magazine and they tasted pretty darn good, too. The cake was moist with hint of lemon and the raspberry whipped cream filling was decadent.
The only I complaint I have relates to how fast they go bad. I made the cakes and the cream filling and only put together two pies: one for me and one for my husband. I put the rest of the cream filling in the fridge and placed the cakes in a container on the counter. The cakes continued to taste amazing for days after they were baked, but the cream filling didn't last more than a day. When I went to make another whoopie pie the next day, I was disappointed to find mushy disgustingness {pretend that's a word} in the container. Sad.
I think they make delightful, individual desserts and would recommend them for a lot of occasions: birthday parties, weddings, engagement parties, baby showers, valentine's day. But don't make them unless you're expecting company. Otherwise, you'll just be wasting a lot of food.
Raspberry-Lemon Whoopie Pies is my one of the favorite recipe. I am so excited for make it tonight. It is really very delicious. Thanks for sharing my favorite recipe here.
